I use a single mic pointing towards the soundhole, but I've heard of others using a second mic pointing at the neck - to get the fret noise, I guess.

I think you're getting confused between the seven Modes of the major scale (which you can play at any position on the neck) and the five positions you'd generally use to play a Pentatonic.

Hiya, If you take a look at how you use chord substitutions to give a song some extra chromatic interest (Flat 5th substitutes, III for VI substitutes and so on, where you're changing the sound oh so slightly by one note), I think you'll be on the right track.
